Saucy Biscuit Melts
INGREDIENTS:
1 (17.3 oz) can refrigerated large biscuits
1 1/2 cups 'cubed' chicken
1 (4.5 oz) can chopped green chiles, drained
1 bunch green onions, sliced
1/2 teaspoon ground cumin
2/3 cup picante sauce
2 cups (8 oz) shredded colby and/or Monterey Jack cheese
Sour Cream
BAKE biscuits according to package directions; split and place on a baking sheet. Set aside.
COMBINE chicken and next four ingredients in a saucepan; cook over medium heat, stirring often, 5 minutes or until thoroughly heated.
SPOON mixture over biscuits, and sprinkle with shredded cheese.
BROIL 4 inches from heat (with electric oven door partially open) about 2 minutes or until cheese melts. Serve immediately with picante sauce and sour cream.
Cooks Note: I was making chicken broth for something else and decided to use the chicken for this. However I over cooked the chicken and was unable to cube it. All I could do was shred the chicken. Surprisingly shredded chicken turns out like a mush loses the chicken flavor...
Makes 8 servings.
