Creamy Cheese & Cherry Pie
INGREDIENTS
3 cups rice crispies, crushed
1/4 cup sugar
1/2 tsp cinnimon
1/2 cup melted butter
4 (3oz) pkgs cream cheese softened
2 eggs
1 tsp vanilla
1/3 cup sugar
1 tsp lemon juice
1 (8 oz.) sour cream
2 tblsp sugar
1 (1 lb. 5 oz.) can cherry pie filling
1 tsp. lemon juice
COMBINE crushed cereal, 1/4 cup sugar and cinnamon with butter, and mix.
PRESS firmly in 9 inch pie pan to form crust, and set aside.
IN Large mixing bowl, beat cream cheese until smooth. Add eggs, vanilla, 1/3 cup sugar and 1 tsp lemon juice, mixing until well combined.
POUR mixture into crust, and bake in oven at 375 for about 20 minutes, or until set.
WHILE pie is baking, stir together sour cream and 2 tblsp sugar.
REMOVE pie from oven and spread sour cream mixture over top. Return to oven, and bake for 5 minutes longer.
REMOVE and cool. Stir together pie filling and the remaining 1 tsp lemon juice. Spread over top of cooled pie.
CHILL well before serving, at least a couple of hours.
