Flan


INGREDIENTS

1/2 cup of sugar
5 sm eggs
1 tblsp of vanilla extract
1/8 tsp of salt
a pinch of nutmeg
1 14-oz can sweetened condensed milk
1 12-oz can evaporated milk

IN a saucepan heat the sugar until it turns into a caramel color, do not burn.

POUR into an 8-inch casserole or mole dish and set aside.

IN a bowl add the eggs and whisk until foamy. Add all the other ingredients and mix well.

Fill a pan large enough to hold the mold halfway with water. Place the mold in the middle of the pan making sure the water doesn't seep into the mold. Turn the stove on to medium heat and place the pan on top.

Partially cover the pan and cook for 40 minutes or until a toothpick comes out clean when you stick it into the middle of the flan.

Refrigerate until cold and serve with fruit.

Serves 7 to 8
