Carolina Gumbo


use seafood or hamburger, both are great!

INGREDIENTS:

1 lb. Gumbo Shrimp (shrimp already peeled & devained)
1/2 lb. imitation crab meat
1 med. to lg. onion, diced
1 can white corn, drained
1 can Great Northern Beans, drained
1 10 oz. pkg. frozed okra, thawed
3 cans stewed & diced tomatoes (UNdrained)
3 tablespoons Chili powder
1 tablespoon veg. oil

In large pan or dutch oven, add oil and onion. Saute onion. Add remaining ingredients and bring to a boil. Cover with lid, turn down to simmer and cook for 25 mintues.

Can be served over rice or in a bowl. Left overs can be frozen. Makes 2 quarts.

This receipe actually called for 1 lb. hamburger, which I replaced with shrimp and crab meat. I also used mild picante sauce in lieu of the equivalant of 3 cans tomatoes...(more spices and flavor!).
