Jambalaya


INGREDIENTS

4 cups water
1 cup uncooked rice
1 tsp. oil
1 medium onion, finely chopped
3 cloves garlic, finely chopped
1 can (14 1/2 oz.) whole tomatoes (drained and chopped)
1 tbs.canned tomato paste
1 cup water
1 lb. smoked sausage (cut into 1/2 inch squares) or shrimp, or diced ham
1/2 tsp. salt
1 tsp. black pepper

STEAM rice in 4 cups water and set aside.

IN a large skillet, heat oil on a medium flame. Add onions and garlic. Sauté 5 minutes until tender. Add tomatoes, tomato paste, and 1 cup water. Let simmer on low flame, uncovered, for 20 to 25 minutes. Add sausage (shrimp or ham), salt, and pepper. Cook 15 minutes more.

ADD cooked rice. Stir well. Cook another 5 minutes on medium flame. Stir occasionally. Serve hot.

Serves 4.
