Bean Dip


INGREDIENTS:

1 can (16 ounces) Campbell's Pork & Beans in Tomato Sauce
3/4 cup shredded Monterey Jack cheese with jalapeno
4 peppers (3 ounces) 1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
1 tablespoon finely chopped onion
1 or 2 Tortilla Cups * (recipe follows)

With fork or potato masher, coarsely mash beans in 1-quart microwave- safe casserole. Stir in cheese, peppers and onion.

Cover with lid; microwave on HIGH 3 minutes or until dip is hot and cheese is melted, stirring once during cooking. Spoon into Tortilla Cup; serve with vegetables for dipping. Makes about 2 cups.

Tortilla Cups: For each, brush both sides of 8-inch flour tortilla with melted butter. Place over inverted 2-cup glass measure. Microwave on HIGH 30 seconds. Press tortilla to side of measure. Microwave on HIGH 30 seconds more. Allow to cool on measure.

Tortilla cup will soften when filled with dip. To prevent this, place custard cup filled with dip inside tortilla cup. Or, make two cups and replace with a freshly filled cup when the first one is empty.
