Brussel Sprouts Vegetable Dish


Has received "Rave Reviews" even from those who do not like Brussels!

INGREDIENTS:


4 slices thick cut bacon
1 med. onion, sliced in strips
1/2 tsp. minced garlic
1/4 stick butter
1 lb. brussel sprouts

AFTER washing brussel sprouts and pinching off any bad areas, peel each leaf off. Just keep cutting the stalk back until you can peel about 85% - 90% of the leaves. Julianne (or slice fairly thin) any portion of the core, that can not be peeled apart. (This can be done the night before.)

CUT bacon strips, width wise - somewhere between 1/4 & 1/2 inches wide. Place bacon pieces and miched garlic in fry pan and fry, stirring often, until bacon is done.

Add Onion, and saute for a couple of minutes. Then add brussel sprout leaves. While cooking on a med./low heat, add butter (cut into patties) and stir from bottom to coat all the leaves. Cover and let cook for about five minutes, and then stir. Repeat this last step until sprouts are 'just' done and leaves are still open and identifiable as brussel sprout leaves.

Makes 2 good servings.
