Cabbage Stew
INGREDIENTS:
1 carrot, sliced
1 large onion
2 celery stalks, sliced
2 garlic cloves, pressed
2 tablespoons vegetable oil
1 small cabbage, coarsely chopped
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
4 1/2 cups water
1 tablespoon beef bullion granules
SAUTE first 4 ingredients in oil in a dutch oven 8 minutes or until tender. Add cabbage and next 3 ingredients; cover and cook over medium heat 10 minutes.
ADD 4 1/2 cups water and bullion granules to cabbage mixture. Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes.
Makes 7 cups
BONUS: For Ham and Cabbage Stew, stir in 2 cups chopped cooked ham or chopped cooked smoked sausage.
NOTE: If served with a slotted spoon, this goes great in the 'Bread Bowls'!
